Ingredients (Serves 4): 100g 70% couverture, 100g unsalted butter, 2 whole eggs + 2 egg yolks, 50g sugar, 30g all-purpose flour.

How to make:

  1. Melt the 70% couverture and butter together over a water bath; let cool slightly.
  2. Whisk the eggs, yolks, and sugar until pale and slightly thickened.
  3. Gently fold the melted chocolate into the egg mixture, then sift in the flour.
  4. Divide into 4 buttered and cocoa-dusted ramekins. Bake at 200°C (400°F) for 12–14 minutes until the edges are firm but the center still jiggles.

Ultra-Silky Chocolate Pots de Crème

Because 70% dark chocolate has such a robust structure, it sets this French baked custard into a velvety texture without needing extra starch or gelatin.

Ingredients: 170g 70% couverture (chopped fine), 240ml heavy cream, 120ml whole milk, 5 egg yolks, 50g sugar, pinch of sea salt.

How to make:

  1. Heat milk and cream until scalding (do not boil). Whisk yolks and sugar together in a separate bowl.
  2. Temper the yolks by slowly whisking in the hot cream mixture, then pour over the chopped 70% couverture and stir until melted and smooth.
  3. Strain through a fine mesh sieve into ramekins.
  4. Bake in a water bath (bain-marie) at 160°C (325°F) for 30–35 minutes until set around the edges. Chill before serving.

Artisanal Mendiants (Dark Chocolate Discs)

Because 70% couverture has an exceptionally clean snap when tempered, it makes the perfect glossy base to showcase crunchy nuts, sea salt, and dried fruit.

Ingredients: 200g 70% couverture, toasted almonds/pistachios, dried cranberries or figs, and flaked sea salt.

How to make:

  1. Temper the 70% couverture (melt to 48–50°C, cool to 28°C, reheat to working temp of 31–32°C).
  2. Spoon small rounds onto parchment paper or a silicone baking mat.
  3. Immediately press roasted nuts, dried fruits, and a pinch of flaky sea salt onto each disc while warm.
  4. Let set at room temperature (around 18–20°C) for 15 minutes for a glossy finish and sharp snap.
